Popped into Grid City here in SLC, which opened right around the start of the pandemic or something. Awful timing, but I’m glad they’re up and killing it. I love the space, and I can’t wait until their rooftop patio is open because rooftop patio. Ang and I safe-distanced at the end of the bar, and got to work on their very unique setup. I’m absolutely, most definitely not yet sold on this, but here we go...From most of the beers, one can choose to have it from cask, nitro, or CO2. I get the idea and all, and definitely understand the difference presented by each system. However, I feel like it’d be better to just focus on making banging beers and not worry about offering these things. I don’t know shit, though, and our baller bartender Steven stood by how much he digs the idea. YMMV, I guess. I went straight for a crispy boi that I liked very, very much, but Ang went directly to cans for higher ABV and tongue-pleasing flavor potency. I definitely DO think they make solid brews. I’m just not sold on this whole shenanigan. What do you think? Fresh-ass, dope-ass idea? Or something rather unnecessary? Whatever your pleasure, cheers to Grid City. - Ryan
