Sparta, Illinois. The literal lower dingle dangle of the state. Home to an annual shotgun shooting event that’s attended by everyone with an NRA patch and a retirement plan, and not much else. EXCEPT WHITE ROOSTER. Damn. Leave it to my brother in beer, Brian from Heartland Beverage, to know this place exists. Okay, so most of y’all know my mouth’s appreciation for sours isn’t what many of yours is, and that I hate pickles and racism, but I want to state something serious: the beers this brewery creates are on par with some of the most incredibly complex and delicious liquids I’ve ever put inside of me. The barrel room wasn’t just packed with future fire, it gave way to the insane amount of attention these three brewers put into every foeder and cask. The layered insanity of their Au Revoir gave me full body shivers and a beerection I can’t fully describe (for legal reasons). I’m not one to blow smoke up butts, but when me and my dude Kerby left for the night to find out where the hell Waterloo, IL, is, we were both so geeked on this place that it was all we talked about. Imagine brewing small-batch perfection on a THREE-BARREL SYSTEM and only brewing TWO BARRELS per batch because your barrels are FOUR BARRELS. Holy god in Southern Illinois, you need to find you some White Rooster. Shocked. Aroused. Inspired. - Joel
